You know those family favorite recipes that make appearances over and over and over ... and no matter how many times they're made, the requests for them just keep on rolling in?  Well, these Fudgy Chocolate Layer Bars are one of those  recipes for our family.

Growing up, no matter how often my Mom made these Chocolate Layer Bars, it wasn't often enough.

With their rich-and-fudgy layer of chocolate sandwiched between two layers of almond-laced crumb crust, their simply was no resisting these wonderful bars.

Mom always whipped up a batch ... or two ... at Christmas time.  But believe me, we didn't limit our requests to just the holiday season.  We pretty much begged for these and their deliciousness all year round.

With their rich-and-fudgy layer of chocolate sandwiched between two layers of almond-laced crumb crust, their simply was no resisting these wonderful bars.

The rich fudgy chocolate layer of these scrumptious bars is made with semi-sweet chocolate chips and cream cheese.  The two are melted together with a little touch of milk.  Slivered almonds are then stirred in for added flavor and a bit of crunch.

This chocolatey goodness is then layered between a buttery-rich crumbly crust.  (If you'd like, add red and green M&Ms to make a festive Christmas Chocolate Layer Bars version.  They're super cute and fun!)

The crust has a bit of almond extract in it, giving a subtle almond flavor that beautifully compliments the chocolate filling.

For the Crust:
  • 3 c. all-purpose flour
  • 1 1/2 c. granulated sugar
  • 1 tsp. baking powder
  • 1 c. (2 sticks) unsalted butter, softened just slightly {do not substitute margarine}
  • 2 eggs
  • 1 tsp. almond extract

How to make Fudgy Chocolate Layer Bars

Prepare the Crust:
  1. Mix together flour, sugar, and baking powder.
  2. Cut butter into small pieces. With an electric mixer on low speed, blend in almond extract, butter, and eggs. (Mixture will be VERY crumbly ... do not over mix. If mixed together too well, the crust will bake up very hard.)
  3. Put 2/3 of the crumb mixture in the bottom of a greased 9x13" baking dish; pat down very lightly with your fingers. Set aside.
Prepare the Chocolate Filling:
  1. Put cream cheese, chocolate chips, and milk in a microwave-safe bowl. Microwave for 1 minute to melt, stirring after 30 seconds. (If not melted, microwave in 20-second intervals until melted.)
  2. Once melted, stir in almonds.
  3. Pour chocolate filling over prepared crust.
  4. Sprinkle remaining crumb mixture evenly on top.
Bake:
  1. Bake at 350℉ for 40-45 minutes.
  2. Cool completely and cut into small squares. Store in the refrigerator.
