Cinco de Mayo is fast approaching!

And while I know it's not what the day is truly about, I love that Cinco de Mayo is a day when we indulge in Mexican-inspired eats and drinks.  Oh, how I love me a great basket of chips and salsa with guacamole and a top-shelf margarita on the side!

Why should nacho chips get all the Cinco de Mayo salsa-and-guacamole fun?  Why not pair one of these favorite dips with something different to create a tasty little bite?

And then this popped into my mind ...

Okay, so maybe baby potatoes aren't the first thing to pop into your mind when you think salsa a guacamole, right.  But stick with me here for just a second.

We love potato skins ... topped with melty cheese and crumbled bacon, right?  So why not bring the potato-skins-and-bacon concept down to miniature form with baby pototatoes?  And why not add some tasty, creamy guacamole into the mix??

Why not, is right!

The hit of bacon in the guacamole itself and sprinkled on top adds just the right saltiness and crunch to these fun little bites. 

And so creamy Bacon Guacamole Potato Bites were born.

The avocado creaminess of the guacamole pairs really nicely with the tender texture of the roasted baby potatoes.  And the hit of bacon in the guacamole itself and sprinkled on top adds just the right saltiness and crunch to these fun little bites. 

These roasted baby potato halves topped with a dollop of creamy bacon-laced guacamole and garnished with more crumbled bacon are one very delicious savory little bite indeed.

The guacamole for these potato bites gets its extra creaminess from a classic favorite baked potato topper ... sour cream.  A little touch of sour cream stirred into the guac really amps up the texture.

The guacamole then also gets a fabulous flavor punch from bacon {I mean, because who doesn't love bacon with potatoes? ... or with anything, for that matter} and Concord Foods Guacamole Mix.  I used Concord Foods' mild Guacamole Mix ... but give their extra spicy variety a try if you like to bring the heat!

With Concord Foods convenient seasoning, simply mix two ripe avocados and one package Guacamole Mix and you're ready to serve up a delicious bowl of fresh-made guacamole with tortilla chips ... as a side to your favorite recipe ... or as a topper for these fun & creamy Bacon Guacamole Potato Bites.  You can find Concord Foods Guacamole Mix in the produce section of your grocery store.

Or, mix up your favorite version of guacamole and add in a little bacon and sour cream ... that will work just fine for these little bites, too.

Creamy Bacon Guacamole Potato Bites

Tender roasted baby potatoes are topped with bacon-laced guacamole to create these fun & festive creamy Bacon Guacamole Potato Bites ~ just perfect for Cinco de Mayo, game day, or party time snacking!
prep time: 40 Mcook time: 20 Mtotal time: 60 M

ingredients:

  • 18 baby yellow potatoes {about 1 1/2 lbs.}, washed & halved lengthwise
  • 1 T. extra-virgin olive oil
  • 1/4 tsp. sea salt
  • 2 avocados, peeled and cubed
  • 1 (1.2 oz) packet Concord Foods Guacamole Mix
  • 1/2 c. sour cream
  • 1/4 c. finely diced tomato
  • 4 slices bacon, cooked & crumbled
  • 1 T. chopped parsley or cilantro {optional}

instructions:

How to cook Creamy Bacon Guacamole Potato Bites

  1. Place halved potatoes in a gallon-sized zip-top bag. Add olive oil and sea salt; seal and shake to coat potatoes. 
  2. Lay potatoes, cut side up, in a single layer on a foil-lined baking sheet. Bake at 350 degrees for 20 minutes, or until just barely fork-tender {but not so tender they easily split or fall apart}. Set potatoes aside to cool.
  3. While potatoes bake, place avocado in a mixing bowl; mash with a fork. Add guacamole mix and sour cream; stir until well combined. Stir in diced tomato and 1/2 of crumbled bacon {reserving the remaining half to sprinkle on top of finished potatoes}. 
  4. Cover and refrigerate for about 30 minutes to allow flavors to meld.
  5. Once potatoes have cooled to room temperature {or to just slightly warm}, top each potato half with a dollop of guacamole. Sprinkle tops with reserved crumbled bacon and chopped parsley or cilantro. Serve at room temperature.
TRACEY'S NOTES:
  1. For potato halves that don't sit level, cut a small slice from the bottom before baking. 
  2. When topping potato halves with guacamole, you can use a small spoon to scoop out a bit of the potato to create a well in the potato half if you'd like. However, I've found this isn't really necessary unless the baby potatoes are on the quite larger side.
