I am a big fan of overnight breakfast and brunch casseroles.  I just love the convenience of putting together a delicious casserole the night before ... followed by the ease of serving up a piping hot breakfast the next morning by simply popping an-already-prepared dish in the oven.

What could be better?

Well, how about making an overnight casserole with ingredients that already give us a head start on the prep?

Whip up this tasty prepare-ahead casserole and serve up a hearty breakfast or brunch your family will love ~ all with a low-maintenance morning for you.

Because that's the case with this hearty Overnight Sausage, Egg & Hash Brown Breakfast Casserole.  Taking advantage of packaged pre-shredded hash browns makes preparation of this tasty casserole super easy.

And while I fry up my own sausage and shred my own cheese, you could certainly skip these steps, too, and take advantage of prepared sausage crumbles and packaged shredded cheese.

Which is all great, because I don't know about you, but in the morning? ...

I'll take all the help I can get.  {Yeh, morning is definitely not my strong point.}

To prepare this make-your-morning-easy Overnight Sausage, Egg & Hash Brown Breakfast Casserole, grab some bread and cut it into cubes.  Grab some eggs.  And grab some cheddar cheese and shred it up.

Once the casserole is baked, the bread cubes bake up super light, giving the finished casserole a fabulous texture.

Then brown a pound of sausage in a skillet ... and add the prepared hash browns.  Cook the hash browns for just a few minutes.

Prepared hash browns can be found in the refrigerated section of the grocery store.  In my local stores, some varieties are near the meats, and some are in the dairy/eggs section.

Next, combine the sausage/hash brown mixture with eggs, milk, spices, the shredded cheese, and the cubed bread.  Mix it all up until its well combined.

The cubed bread soaks up some of the egg and milk as the mixture rests overnight.

And once the casserole is baked, the bread cubes bake up super light, giving the finished casserole a fabulous texture.

It's nice and fluffy and light.  And sooooo good.

ingredients:

  • 1 lb. pork sausage
  • 1 (20 oz.) package shredded hash browns {approximately 4 1/2 c. shredded potatoes}
  • 10 large eggs
  • 3 c. milk
  • 1 tsp. dry mustard
  • 1 tsp. salt
  • 1/2 tsp. paprika
  • 1/4 tsp. black pepper
  • 3 slices white {or whole wheat} bread, cut into 1/2-inch cubes
  • 1 ½ c. shredded cheddar cheese

instructions:

How to cook Overnight Sausage, Egg & Hash Brown Breakfast Casserole

  1. Brown sausage in a saute pan over medium-high heat; drain all but 1 tablespoon grease. Add shredded hash brown potatoes. Reduce heat to medium and cook, stirring frequently, for 5 minutes.
  2. While sausage cooks, whisk together eggs, milk, dry mustard, salt, paprika, and pepper in a large mixing bowl. Add bread cubes and cheese.
  3. Stir cooked sausage and potato mixture into egg mixture.
  4. Pour into a greased 9x13" pan. Cover and refrigerate overnight {or at least 4 hours}.
  5. Bake at 350 degrees, uncovered, for 1 hour until set and a bit puffed in the center. {Depending on the oven, it sometimes takes about an hour and 15 minutes to fully bake.}

  5. For some reason the selection of Simply Potatoes in my area varies wildly from store to store. Walmart only carries the hashbrowns, while another store only carries the diced potatoes and another only carries the mashed potatoes. It is almost like they got together and each decided to carry only specific products!!!
