Easy Chocolate Mousse Pie

Thank you to Silk for sponsoring creation of this easy Chocolate Mousse Pie and this post.  Just like Silk Cashewmilk, this pie is irresistibly creamy and delicious!

Easy Chocolate Mousse Pie

To me, one of the world's most perfect flavor matches is chocolate and nuts.  Give me a few chocolate covered almonds, or chocolate covered pecans, or a handful of cashews and chocolate chips mixed together ... and I'm in heaven.  When I need a little pick-me-up or am craving a sweet bite, chocolate and nuts is quite often what I grab.  I love that I get the sweetness of chocolate paired with the plant-based protein of nuts ... it fills me up while simultaneously satisfying my {ever-active} sweet tooth!

Well, want to know a great way to incorporate that perfect chocolate-and-nut flavor match into an easy dessert?  With this easy Chocolate Mousse Pie, of course! ... made with Silk Cashewmilk and topped with a delicious sprinkling of sliced almonds and chopped cashews.

This creation inspired by one of my favorite snacks ... cashews and chocolate chips ... is creamy and delicious, with just the right touch of crunch from the sprinkling of nut {and mini chocolate chip} topping.

Easy Chocolate Mousse Pie

Speaking of creamy and delicious ... have you tried Silk Cashewmilk? Made with the special creaminess of cashews, new Silk Cashewmilk brings an irresistibly creamy hint-of-cashew-taste that is perfect over cereal, in recipes or straight from the carton. It's a great dairy-free option that delivers up the perfect match between creamy, delicious taste and fewer calories.

And let me tell you, just like the irresistibly creamy texture of Silk Cashewmilk, the texture of this easy Chocolate Mousse Pie is indeed irresistibly creamy, too.

I mean, just look at the fluffiness of that chocolate filling.  Irresistible, don't you think?

About the only thing that can make this rich, fluffy, nutty-chocolate-y, irresistibly creamy Chocolate Mousse Pie better is ... to enjoy it alongside a big glass of creamy cashewmilk!

For the filling:
  • 1 (12 oz.) package mini semi-sweet chocolate chips* {reserve 1 T. for topping}
  • 1/2 c. Silk Cashewmilk {or Silk Almond Milk}
  • 1 T. granulated sugar
  • 1/2 tsp. vanilla extract
  • 1 1/2 (8 oz) containers non-dairy whipped topping {12 oz. total}
  • 1 prepared graham cracker pie crust
For the topping:
  • 1 T. mini semi-sweet chocolate chips {reserved from package used to make filling}
  • 2 T. coarsely chopped cashews
  • 1 T. sliced almonds
  1. Place chocolate chips, Cashewmilk, and sugar in a small saucepan over low heat. Heat, stirring constantly, until melted and smooth. Remove from heat and stir in vanilla. Let cool for 10 minutes.
  2. Fold melted chocolate mixture into the non-dairy whipped topping until well combined. Spoon into graham cracker crust. Sprinkle top with cashews, sliced almonds, and reserved mini chocolate chips, if desired.
  3. Cover and refrigerate at least 4 hours or over night.

* Many brands of chocolate chips contain milk fat.  If a completely non-dairy dessert is desired, choose a non-dairy brand of semi-sweet chocolate chips.
