Our moving process is in full swing!  So I'm still relying on easy, quick-to-pull-together dishes to get dinner on the table during this crazy time - like Quick Weeknight Chicken Penne Alfredo ... or Pizza Spaghetti Bake ... or this easy family favorite 5-Cup Ambrosia Fruit Salad.

5-Cup Ambrosia Fruit Salad gets its name from the supposedly  five cups of "stuff used to make it.  5 ingredients - using 1 cup of each.  However, over time, the recipe has morphed to be not exactly 5 cups.  We'll be okay with that creative stretch with the name, right?

As for our move, I'm happy to say we've finally found our new home and are gearing toward a July 31st closing date.  But moving to a new house isn't the first moving challenge in our process.  No.  My first  moving challenge was packing up and moving my classroom.

Which, trust me, was an ordeal in and of itself.

I'm a big fan of flavored iced teas.  Since I don't drink coffee, iced tea used to be my caffeine of choice.  {I say 'used to be' because I don't drink caffeine at all anymore ... except on the very rare occasion.  Can you believe it??  So my iced tea is made with decaffeinated tea bags now-a-days.}  Anyway ... back in my corporate-America days, when everyone else did their morning coffee run I did my morning tea run.  In the winter my 'run' was for a chai tea latte.  In the other seasons my 'run' was for an iced tea.

A flavored iced tea, to be exact.

Tziki.  Ztiki.  Zatiki. Tzatsiki.  Am I the only one who has trouble spelling Tzatziki  correctly?  {And Tzatziki is  the correct way, by the way.}  Apparently I am Tzatziki-challenged.  Please tell me I'm not alone.

I swear, every time I need to type that word, I have to look it up to see if it's right.

Well, I may have trouble spelling the word ... but I certainly don't have trouble enjoying this totally yummy Tzatziki Chicken Salad.
