Cinnamon Syrup ~ a Versatile Little Homemade Syrup

Cinnamon Syrup is a simple and versatile little syrup you can easily whip up at home.  Try it on pancakes, waffles, ice cream, honeydew melon, or anything else your heart desires.


My Vermont friends and readers ... look away!  I'm about to talk about a syrup that's not  pure Vermont maple  syrup.

I know, I know.  The horror!  A native Vermonter being disloyal to her syrup true love?

Yes, I'm about to be a syrup traitor.  Yes, I'm about to talk about Cinnamon  Syrup.  Shhhhhhh ... don't tell the maple, okay?  I'm afraid it might be jealous.
Ah, it's true.  I'm a pure Vermont maple syrup fanatic.  I moved away from Vermont to North Carolina 20 years ago, and I still have maple syrup shipped to me from Vermont.  Grade B, to be exact.  It's the best.

But I also do love cinnamon.  

So when I came across a recipe for cinnamon syrup, I just had to give it a try.


I whipped up a batch.  And it smelled soooooooo good.

I could hardly wait to try it.

And let me just tell you, my friends ... It.  Is.  Yummy.

{And isn't it cute in this little jar?  I'm thinking it would make great neighbor gifts for Christmas, paired with a little package of homemade pancake mix.  Don't you think??}


Mmmmmm, it was yummy with my Baked Blueberry Buttermilk Pancakes ...


... and Honeydew with Maple {Cinnamon} Syrup and Dried Cranberries ...


... and on ice cream.  Ohhhhhhhh, it's soooo good on ice cream.


I could also see it being great on bread pudding.  Or waffles.  Or cheesecake.  Or, or, or ... I think the possibilities are pretty endless.

So if you're a cinnamon fan, I highly recommend giving this versatile little Cinnamon Syrup a try.  I know I loved  it!

{Just don't tell my maple syrup.  Okay?  I really don't want any jealously issues in my fridge ...}

Cinnamon Syrup

Cinnamon Syrup

Cinnamon Syrup is a simple and versatile little syrup you can easily whip up at home. Try it on pancakes, waffles, ice cream, honeydew melon, or anything else your heart desires.
Prep time: 7 MCook time: 5 MTotal time: 12 M

Ingredients:

  • 1 c. granulated sugar
  • 1/2 c. light corn syrup
  • 1/4 c. water
  • 3/4 tsp. ground cinnamon
  • small pinch salt
  • 1/2 c. evaporated milk

Instructions:

  1. Combine sugar, corn syrup, water, cinnamon, and salt in a small saucepan. Bring mixture to a boil over medium heat, stirring constantly. Boil for 2 minutes without stirring. 
  2. Remove from heat and cool for 5 minutes.
  3. Stir in evaporated milk.
  4. Serve warm or cold over ice cream, waffles, pancakes, cheesecake, or anything else your heart desires. Store in the refrigerator.

  6. I know this is a long shot since no one has commented since 2014 but can this recipe be modified to make coffee creamer? I have lt corn syrup and evap milk and vanilla, salt etc but I do not have half and half, sweetened condensed milk or any other every day milk that all of the creamer recipes on the internet call for. Thank you!

    1. Hello, we have heard of people using coconut cream as a substitute for condensed milk. We have never tried it but it may work for you; if you try it let us know how it works.
