Summertime is zucchini time! If you've got even just one zucchini plant in your backyard, you know you have an abundance of this prolific summer veggie. -- And even though we love it, with this abundance? -- It can get tough continually coming up with tasty ways to enjoy it.

One of our favorite ways to enjoy our garden-fresh zucchini is this Broiled Zucchini with Feta Crumb Topping. In this easy dish, medium-sized zucchini are cut in half the long way, slathered with Dijon mustard (or mayonnaise, if you prefer), topped with a tasty mixture of bread crumbs and Feta cheese, and broiled until the topping is a nice golden brown.

The result is zucchini deliciousness, for sure. The zucchini itself becomes tender while still maintaining some of its crispness. And the flavors of the warm zucchini, Dijon mustard tang, and salty Feta cheese work really nicely together.

There's no long list of ingredients here. It takes just 6 ingredients (plus some salt and pepper) to make this easy broiled zucchini. To whip up a pan, you'll need:

  • Zucchini - The star of the dish! Choose medium-sized zucchini for the best result, as they'll broil more evenly and quickly than their larger counterparts.

  • Dijon mustard - A thin layer spread on the zucchini halves brings a nice tang of flavor and helps the crumb topping adhere. Mayonnaise can be substituted, if you prefer.

  • Feta cheese crumbles - Brings a tasty, salty element to the crumb topping. Purchase pre-crumbled Feta, or crumble your own from a block.

  • Seasoned bread crumbs - Prepared Italian-style bread crumbs form the base of the crumb topping. These pre-seasoned prepared crumbs make the dish quick and easy to prepare.

  • Green onion - Adds nice flavor and freshness to the crumb topping. 

  • Extra virgin olive oil - Binds the crumb topping together and helps create a beautiful golden brown color when the topping is broiled.

How to Make Broiled Zucchini with Feta Crumb Topping:

Start by simply halving some medium-sized zucchini the long way and spreading each cut side with some Dijon mustard -- or some mayonnaise, if you prefer.  Both spreads taste yummy, so pick your preference. We love the little zippy zing of flavor the Dijon mustard brings.

Place the slathered zucchini halves on a foil-lined baking sheet and pop them under the broiler for 7 minutes. This gives the zucchini a head start in cooking a bit before adding the crumb topping.

While the zucchini broils, whip up a quick crumb topping with feta cheese crumbles, prepared seasoned bread crumbs, green onions, and olive oil.

Remove the broiled zucchini from the oven and pile a few tablespoons of the feta crumbs on each zucchini half.

Then stick the pan back in the oven with the broiler turned off and let the zucchini stand in the still-hot oven for 5 to 7 minutes. The zucchini will cook a little bit more, and the Feta crumb topping will turn a nice golden brown.

When ready to serve, sprinkle each zucchini half with a little salt and pepper, to taste. And then you're ready to dive into the crumb-topped zucchini deliciousness.

Ingredients

  • 2 medium-sized zucchini
  • 1 1/2 T. Dijon mustard OR mayonnaise
  • 1/4 c. feta cheese crumbles
  • 1/4 c. seasoned Italian-style bread crumbs
  • 2 T. finely chopped green onion
  • 2 T. extra virgin olive oil
  • salt & pepper

Instructions

  1. Cut zucchini in half lengthwise. Spread the cut side of each half with Dijon mustard or mayonnaise (we like the little zing of flavor that Dijon mustard gives, but either spread works great). Place zucchini halves, cut side up, on a foil-lined baking sheet.
  2. Broil about 5 inches from the heat for 7 minutes.
  3. While zucchini broils, combine feta, bread crumbs, green onion, and olive oil in a small bowl; stir together with a fork.
  4. Remove zucchini from the broiler, but leave the broiler on. Place about 3 tablespoons of feta mixture on each zucchini half.
  5. Turn the broiler off and return zucchini to the oven. Let zucchini stand in the still-hot oven for 5 to 7 minutes. (If you're still finishing up the rest of dinner, it can hang out in the oven a bit longer to keep warm.)
  6. When ready to serve, sprinkle each zucchini half with salt and pepper, to taste.
