Don't feel like going out but want to enjoy the great taste of Buffalo wings?  No problem!  It's easy to make your own Baked Buffalo Wings at home with just a few simple ingredients.  Believe me, it's easier than you think!

I developed a love for Buffalo wings while I was going to graduate school in upstate New York.  I mean, having the actual city of Buffalo in it's midst makes upstate New York the king of the Buffalo wing!

And I love my wings the traditional way ... dunked in delicious blue cheese dressing.  I don't know what it is about the combination of hot sauce and blue cheese, but it's a little piece of flavor heaven for me.

But in today's post, I don't want to talk just about Buffalo wings ~ I also want to share some big happenings that have been going on in "life" around The Kitchen is My Playground...

See, "life" has been a little crazy around these parts ... as you may have noticed by my fewer posts over the last couple of months.  And it all started on March 8th.

March 8th is day that changed our family's life forever.  In an instant.

That morning my Dad walked down the driveway to pick up the newspaper, just like always.  Unfortunately, ice from a huge storm the day before had not completely melted and he slipped, falling straight back onto the concrete driveway.  He sustained a brain injury, and spent the next 29 days in the hospital.


I'm very happy to report that Dad is home now ... and reunited with his favorite recliner.  They missed each other, for sure.  He's recovering well from the injury, and working hard to get all his strength, balance, and coordination back.  I'm proud of all his {and Mom's} hard work!  It's a rough recovery road for both of them.

It's my Dad walking in the driveway with my Mom on the day after he got out of the hospital.  It's a sight we weren't sure we'd ever see again.  Was he unsteady?  Sure. Was he using a walker?  Yes.  Did Mom have to hold onto him to ensure his stability?  Absolutely.  But he was walking.  And it was a sight for our family's sore {and very tired} eyes.

Now, several weeks after returning home, the walker is gone.  Dad is continuing to improve every day.  And guess what?  Dad is back DANCING!  He and Mom are shag dancers, and Dad danced for the first time this past weekend.  Yay!  The dance moves are rusty, but we feel sure Dad's 'full groove' will come back in time.  It's a sight I'm very much looking forward to seeing.  You go, Dad!

The other "big happening" going on in life around The Kitchen is My Playground  is ... WE'RE MOVING!


Yes, Mark and I are relocating to be closer to our families.  We're currently about 2 hours away, and want to be closer to be able to more easily spend time with our families.  I'm looking forward to the result ... but certainly not  looking forward to the process.

One discovery already?  House hunting is really not that fun.

Oh, it may be fun for about the first 2 hours or so.  But after the 80th property drive-by? {and I'm not  at all kidding about the 80} ... umm, not so fun anymore.

Oh well.  You gotta do what you gotta do.

Hmmm, maybe I need to enjoy a little Baked Buffalo Wings relaxation break.  What do you think?

I know what Dad would think!  He'd be allllllllll over these wings.

When Dad would come visit me in graduate school, we'd sometimes go out to my favorite hole-in-the-wall wing place and order up a big platter.  They had a 10-cent wing deal.  10 cents!!  Can you believe it?

That means you could enjoy this big old platter full for all of about $1.50.  Um, yeah.  Crazy.  Crazy good, that is.

So if you're a Buffalo wing fan like me and Dad, whip up a big batch of these baked beauties, grab some homemade blue cheese dressing, and get dunking!

And, Dad, you keep working hard at your recovery to get dancing!

Baked Buffalo Wings

Baked Buffalo Wings

Don't feel like going out but want to enjoy the great taste of Buffalo wings? No problem! It's easy to make your own Baked Buffalo Wings at home with just a few simple ingredients. Believe me, it's easier than you think!
prep time: 10 Mcook time: 45 Mtotal time: 55 M

ingredients:

  • 4 lbs. chicken wings, patted dry
  • 2 T. olive or canola oil
  • salt & pepper
  • 3/4 c. Frank's Red Hot sauce, at room temperature
  • 3 T. butter, melted

instructions:

How to cook Baked Buffalo Wings

  1. Place chicken wings in a large bowl; drizzle with oil and sprinkle with salt and pepper. Toss to coat.
  2. Place wings in a single layer on a foil-lined jelly roll pan {baking pan with a rim} lightly coated with non-stick cooking spray. If wings won't fit in a single layer, divide between two pans. Bake at 400 degrees for 45 minutes, turning wings over once during cooking.
  3. While wings bake, combine Frank's Red Hot sauce and melted butter in a medium bowl. When wings are done, toss with sauce to coat, working in batches to coat a few wings at a time.
  4. For "wet" saucy wings, place on a serving platter after tossing with the sauce. For "dry" wings {which is how we prefer them}, return sauce-coated wings to the baking pan. Bake for an additional 3 to 5 minutes.
  5. Serve with carrot and celery sticks and blue cheese dressing for dipping. {By the way ... here's the best homemade blue cheese dressing EVER!}

  1. This post made me SMILE so big when I saw the picture of your mom and dad! I loved it!!! The moving sign makes me sad for me...but HAPPY for you and your family! And, those wings, popcorn and yummy appetizers just make me hungry, even though it is 8:00 am!!! :)

  2. First of all, glad your dad is ok. How scary!! Second, these wings look awesome. I spent three years on a quest for the best hot wings.   7. I made these for Suoer Bowl Sunday including your Blue Cheese Dressing recipe and Oh My!!! They were SOOOO good! I am making them again today because I can’t get them out of my head! Lol… and I had dressing left over so I HAD to make more wings! 😉
