Turkey & Apricot Sliders ~ keep enjoying that Thanksgiving turkey!

Chock full of chopped turkey, apricot preserves, Dijon mustard, and pecans, these baked Turkey and Apricot Sliders aren't your average turkey sandwiches!  


Well, it's almost Thanksgiving!  That's right, Thanksgiving is next week.  Are you ready to gobble 'til you wobble?  I know I sure am.

I've said it before, and I'll say it again ... the turkey itself is actually my least favorite part of the Thanksgiving meal.  I'm much more interested in all the yummy sides.  But come the day after Thanksgiving ... now that's a different story.  Then ... then ... I'm all about the turkey leftovers.  I like to make little bitty turkey sandwiches, all slathered up with mayo, on leftover rolls.  It's my favorite kind of turkey sandwich!

Well, maybe until now ...

The totally tasty combination of turkey, apricot preserves, Dijon mustard, and chopped pecans in these little sliders has taken over the stop spot for me when it comes to turkey sandwiches.


Modeled after the ever-popular baked ham-&-cheese party sandwiches, this turkey version is built on little King's Hawaiian dinner rolls, wrapped in foil, and baked until they're hot and bubbling with melted provolone cheese.

The apricot provides a hint of sweetness.  The Dijon provides a little zip.  And the chopped pecans give a flavorful bit of crunch.

Together, it's a fabulous combination.

Turkey & Apricot Sliders

Ingredients
  • 2 T. apricot preserves
  • 2 T. mayonnaise
  • 2 tsp. Dijon mustard
  • 2 c. chopped cooked turkey
  • 1 T. chopped green onion (or finely chopped yellow onion)
  • 1/4 c. chopped pecans
  • 4 or 5 slices provolone cheese
  • 1 (12 oz.) package small dinner rolls (I use King's Hawaiian dinner rolls)
Directions
  1. In a small bowl, combine apricot preserves, mayonnaise, and Dijon mustard.
  2. Without separating the dinner rolls, use a serrated knife to cut the rolls in half lengthwise. Spread apricot mixture evenly on the cut sides of the rolls. Place chopped turkey evenly across the bottom half of the rolls; sprinkle with green onion and pecans, and top with cheese slices. Cover with the tops of the rolls.
  3. Wrap the sandwiches in aluminum foil. Bake at 350 degrees for 20 - 25 minutes, until heated through and cheese is melted. After removing from the foil, use a serrated knife to cut into individual sandwiches.

  2. Sounds delicious! I might try this with chicken, since we don't roast turkeys at our house. Chicken and duck are what we prefer.
