Oh Henry! Bars ~ Gooey Fudgey Peanut-Buttery Goodness

Classic Oh Henry! Bars are scrumptious, ooey-gooey fudge and peanut butter goodness.  It's no wonder they're always a hit!

Do you like chocolate?  How about peanut butter?  How about ooey-gooey yumminess??

Then I have got the bars for you! ... these classic Oh Henry! Bars.  Are right.  Up.  Your.  Alley.

My Mom used to make these a lot when I was growing up, and I always loved them.  Still do.  For me, it's like a trip down memory lane whenever I make them.

Now, this particular batch was whipped up for my 1st grade teacher team at school.  As the end of the school year was approaching, we needed an ooey-gooey treat to help us get through all the year-end paperwork.  I mean, seriously, people ... you really wouldn't believe the amount of paperwork teachers do at the end of the year.

It's all part of the job, and we muddle through it.  But a bit of chocolate never hurts to keep us going!  Especially when that chocolate is mixed with yummy crunchy peanut butter.  And then smothered on top of a golden-baked oatmeal base.  Mmmmmm.

The oatmeal base is a simple mixture of quick cooking oats, butter, sugar, and light corn syrup that's baked for just a few minutes to hold together.  It's stays a little bit gooey after it's baked, has a sweet flavor, and pairs fabulously with the chocolate-peanut butter topping.

The chocolate topping is just semi-sweet chocolate chips and crunchy peanut butter melted together ... super easy to make.  You could certainly use creamy peanut butter if you'd like, but the bars would be lacking the little bit of texture crunch the crunchy peanut butter brings.

Now, believe it or not, there were a few of these bars left in the pan at the end of the day when I brought them to school to share.  So, I sent them home with two of our teammates.

I won't name names ... but rumor has it that a not-to-be-named husband of one of these teammates thought these Oh Henry! Bars were sooooo good he licked the plastic baggie they came home in so as not to waste one little teeny bit.

Now, if that's not an endorsement for the ooey-gooey fudgey peanut-y goodness of these, I don't know what is.

You'll be seriously glad you did.  And I won't tell if you lick the pan {or baggie} they're in ... I promise.

Yield: about 20-24 bars

Oh Henry! Bars

Classic Oh Henry! Bars are scrumptious, ooey-gooey fudge and peanut butter goodness. It's no wonder they're always a hit!
prep time: 20 Mcook time: 12 Mtotal time: 32 M

ingredients:

  • 2/3 c. butter, softened
  • 1 c. granulated sugar
  • 4 c. quick cooking oats
  • 1/2 c. light corn syrup
  • 3 tsp. vanilla extract
  • dash of salt
  • 2/3 c. crunchy peanut butter
  • 1 c. (6 oz.) semi-sweet chocolate chips

instructions:

How to cook Oh Henry! Bars

  1. Cream butter and granulated sugar with an electric mixer. Add oats, corn syrup, vanilla and salt. Stir well.
  2. Press oat mixture firmly into a greased 9x13" baking pan. Bake at 375 degrees for 12 minutes. 
  3. Remove pan from oven and set aside to cool slightly while you prepare the chocolate-peanut butter topping in step 4.
  4. In the top of a double boiler or in a saucepan over very low heat, melt crunchy peanut butter and chocolate chips together, stirring frequently.
  5. Spread the chocolate-peanut topping evenly over the oat base. 
  6. Place in the refrigerator to harden. Cut into squares once chilled.

    1. Yes, you can certainly use creamy peanut butter instead of crunchy ... you'll just be missing the crunchy peanut chunks in the topping.
