That classic "Willy Wonka and the Chocolate Factory" word, scrum-didily-umptious, may just be the perfect word to describe this triple-layer Mocha Fudge Pie. Because it is absolutely scrum-didily-umptious good! Do you see those yummy-looking layers?

You know, when I sat down to think about when I started making this Mocha Fudge Pie, I realized I got this recipe about 28 years ago. (And our candy cane cookies we do at Christmas time? I've been making those with my Mom for about 45 years.)  Which leads me to think, ummmm, just exactly when did I become old enough to say I've been making a dish for 30 to 40 years??  It just doesn't seem possible.

Well, all those 28 years or so I've been making Mocha Fudge Pie are just a testament to exactly how tasty this creamy pie is. Whenever I've made it, it's always been a hit. -- Each and every time. It's one of those recipes where when people take their first bite, you hear that deeply-satisfied "mmmmmmmm." Which is simply music to a cook's ears, for sure.

But with its coffee-laced fudgy brownie bottom, topped with two rich coffee and Kahlua-laced creamy layers, what's not to love?

Layered Mocha Fudge Pie Ingredients:

Mocha Fudge Pie is made up of three layers -- 1. a brownie bottom crust, 2. a coffee and Kahlua-laced fluffy chocolate pudding middle, and 3. Kahlua/coffee whipped cream topping. 

To whip up these tasty layers (along with some baking basics), you'll need:

  • Fudge brownie mix - Half a box of fudge brownie mix serves as the base of the pie. Save the rest of the box to make the pie again later, or just make 2 pies at once!

  • Chocolate instant pudding - A small box of instant chocolate pudding creates the base of the middle layer. Regular and sugar-free pudding mix both work just fine.

  • Instant coffee granules - Dissolved in all three layers of the pie, instant coffee granules bring the coffee element of the classic mocha coffee-and-chocolate combination. We always use Folger's brand instant coffee.

  • Kahlua - Stirred into both of the pie's creamy layers, Kahlua brings even more rich coffee flavor to the mocha mix.

  • Cool Whip - Creates the fluffy element of the pie's creamy layers. Substitute homemade whipped cream, if you'd prefer.

How to Make a Layered Mocha Fudge Pie:

You'll get a few dishes dirty whipping up a Mocha Fudge Pie, but it's worth it!

Get started by baking the brownie crust. To do this, combine 1/2 a package of fudge brownie mix with some instant coffee granules, hot water, vanilla extract, and 2 egg whites. Pour the batter into a 9-inch pie dish and bake until the brownie is done. Check the center with a wooden pick -- you'll want it to come out clean, or with just a few small crumbs clinging to it. Set the baked brownie crust aside to cool completely.

Once the brownie crust is cooled, whip up the remaining two creamy layers.

First, combine some cold milk, Kahlua, instant coffee granules, and vanilla extract in a bowl, stirring until the coffee dissolves. Add a package of chocolate instant pudding and beat the mixture with an electric mixer until everything's well combined and starting to thicken. Then fold in 1/2 a container of Cool Whip and spread the mixture evenly over the brownie crust.

For the top layer, stir some Kahlua and instant coffee granules into the remaining 1/2 container of Cool Whip. Then spread this evenly on the top of the pie.

Sprinkle on some chocolate curls, if you'd like, and chill the pie for a bit. Then cut into those beautiful, creamy, mocha fudgy, layers and dig in.

Layered Mocha Fudge Pie

Ingredients

For the 1st layer:
  • 1/4 c. hot water
  • 2 tsp. instant coffee granules
  • 1/2 of an 18.3 oz. box fudge brownie mix (about 1 & 1/2 c. dry mix)
  • 1 tsp. vanilla extract
  • 2 egg whites
For the 2nd layer:
  • 3/4 c. cold milk
  • 2 T. Kahlua
  • 1 tsp. instant coffee granules
  • 1 tsp. vanilla extract
  • 1 small (3.9 oz.) package chocolate instant pudding (sugar-free works just fine)
  • 1 1/2 c. Cool Whip (half of an 8 oz. container; Lite works just fine)
For the 3rd layer:
  • 1 T. Kahlua
  • 1 tsp. instant coffee granules
  • 1 1/2 c. Cool Whip (half of an 8 oz. container)
  • chocolate curls (optional)

Instructions

Prepare the 1st layer:
  1. Combine hot water and the 2 teaspoons instant coffee granules in a medium bowl; stir well. Add dry brownie mix, vanilla extract, and egg whites; stir until well blended.
  2. Pour into a 9-inch pie plate coated with non-stick cooking spray.
  3. Bake at 325℉ for 23-27 minutes, until brownie is done. (Wooden pick inserted in the center should come out clean, or with just a few small crumbs clinging to it.)
  4. Cool completely.
Prepare the 2nd layer:
  1. Combine milk, the 2 tablespoons Kahlua, 1 teaspoon instant coffee granules, and vanilla extract in a bowl. Add pudding mix and beat with an electric mixer at medium speed for 1 minute.
  2. Gently fold in 1 1/2 cups Cool Whip.
  3. Spread pudding mixture evenly over cooled brownie layer.
Prepare the 3rd layer:
  1. Combine the 1 tablespoon Kahlua and 1 teaspoon instant coffee granules in a bowl; stir well to dissolve coffee granules. Gently fold in 1 1/2 cups Cool Whip.
  2. Spread mixture evenly over pudding layer. Sprinkle with chocolate curls, if desired.
  3. Store loosely covered in the refrigerator.
